Omelete de abobrinha
Ingredientes:
. 2 colheres (sopa) de azeite
. 1 cebola cortada em rodelas finas
. 500 g de abobrinha em rodelas finas
. 7 ovos
. 1/2 xícara (chá) de azeitonas verdes sem caroço
. 100 g de queijo branco ralado (opcional)
. 100 g de castanha-do-pará picada ou amêndoas
. Sal e pimenta a gosto
Modo de preparo:
Em uma frigideira grande, aqueça o azeite e frite as rodelas de cebola. Junte as rodelas de abobrinha, deixe refogar por três minutos e reserve. Em outra tigela, bata os ovos, ponha a azeitona picada, o queijo, a castanha, o sal e a pimenta. Adicione a abobrinha com a cebola e despeje em uma forma redonda untada com óleo. Leve ao forno e asse em forno preaquecido a 200 °C por 30 minutos ou até dourar toda a superfície. Retire do forno, desenforme e sirva em seguida imediatamente.
Dica: Se preferir, asse em um refratário e não desenforme.
